What’s for Dinner Tonight?

Several of us have mentioned bagged salads as an easy way to add veggies and I use them more in the winter when veggies aren’t great. Anyway I tried a new one from Costco that I liked. It did have a little bit of spice (to me very little but I know some people are sensitive, like my mom who often makes me try things at restaurants before she eats them) so I wanted to mention it. It came as a 2 pack which made it easier to portion and keep fresh.

I was right! Last night, Hubs picked up a Pizza Margherita from our fav place down the hill. 🍕

I don’t think I’m planning on dinner tonight. I’m having a little tea party with my youngest daughter and grandson. Tea sandwiches: chicken Napa salad, egg salad and cucumber. A few jam sandwiches for my grandson as well. Fresh fruit: raspberries & pine berries. Green salad: with roasted pecans and goat cheese & apple. Scones: cranberry orange and an earl grey tea cake.
Sweets: raspberry mousse bites and chocolate truffles. Tea: cream of earl grey, lemon lavender & bourbon vanilla

Anyway!! Hahaha…that can be what hubby & I nibble on for this evening, if we are hungry for dinner. 🍽️ Cheers to a great weekend, all!

Made a basic chicken veggie soup earlier in the week from a 1/2 rotisserie bird. Today, I changed it around by adding tumeric, lots of ground pepper and a handful of red lentils. When it was finished cooking I added a few Tbs of chopped mint, dill and parsley to the bowl and then mixed the soup in. Finally, mixed some plain yogurt and lemon juice together and dribble on top.
Tasted like a bowl of summer warmth.

Right up my alley! Sounds so warm, fresh and delicious!
 
Last night, we had lobster bisque, Spicy Tuna Tartare & tried Wagyu for the first time. We've always been too cheap to order it, but the restaurant had it served on a hot stone in an appetizer portion. Wow, have we been missing out. That was by far the best meat I've ever eaten.

@NYCgrrl I make american chop suey buy chopping up an onion (sometimes) and throwing it in the frying pan where I am browning ground beef. That goes in a casserole dish with cooked elbow noodles and a can of diced tomatoes. Pop it in the oven to heat thoroughly and serve. it's simple and sounds boring but if you ate it growing up, it's like revisiting childhood!

Recap: Thursday the resident 8 year old had a sleep-over at his grandparents' house so DH and I went out to dinner at our local Thai restaurant with DD and SIL. Four appetizers (crab rangoon, fresh rolls, scallion pancakes, shrimp tempura), two entrees (pad see ew and some other noodle dish, can't remember) and 8 cocktails came to $203 with tax and tip. I don't think that's horrifying for 4 adults, but it was an unplanned night out- worth it, but not part of this week's budget.
Friday- DD/8yo made cream of tomato soup from scratch, with grilled cheese sandwich and bagged salad (not sure what kind).
Tonight (actually Saturday night... didn't realize it was past midnight) I used up last weekend's leftover short ribs. Pulled the meat out and blended the veg (carrot, onion, celery) into the to-die-for broth, then simmered freshly chopped carrot and onion in the broth until tender. I chopped up the meat and threw that in, then made a mashed potato (also left from the short rib meal last weekend) dumpling dough with parsley and garlic and cooked those in the broth. I've never done this before, was really flying by the seat of my pants, but man, was it good! We didn't have anything else with it, but I think there were 2 onions and over a pound of carrots in the broth (between what was pureed into the broth and what was freshly cooked) so we decided to call it good!

It's been a while since I made anything except the meal subscriptions but being as it's Sunday and I have a little time, I'm doing a family-favorite braised beef recipe. It takes a good 4 hours to cook properly and will be served with carrots and onions cooked alongside, mashed potatoes, green salad and lovely fresh bread for the pan juices.
