western side cruise schedule

Got a message today to request a 7 day cruise only package for return cruisers with some discounts involved. When does the Western Caribbean schedule begin? And how do you know what weeks are Western vs. Eastern? Is there a schedule somewhere I cannot find. Asked for a quote, waiting on the cost. Thoroughly enjoyed the 7 day cruise we took last April, can't afford to go again this April vacation, but April 2003 is possible. Anyone have ideas on excursions, especially for Key West?

How do you book excursions? If you book them on the ship and its a full house, Do they have enough room for all or is first come first serve?

I would assume there is enough room for all, but i've never cruised before so I have no idea.
