Have a 7 night on Fantasy in January, myself, DH, DS8 and DS7.

Currently we’re booked for Dolphin Swim (Chakanaab) in Cozumel and Nautilus underwater boat tour in Grand Cayman.
Thinking about switching to the dolphin swim in GC and the Mayan Chocolate experience in Cozumel.

We definitely want to do a dolphin swim in one and something only a few hours and not beachy in the other. Can’t decide which is best. The booking window for first timers opens tonight at midnight so I know some of the availability is about to disappear and would like to firm up our decision before that.

I personally would keep the dolphin swim that you have booked if it's something you really want th o do. We did it there in 2017 and it was a lot of fun. Plus after the swim you get to do the other stuff at the park like see the sea lion show, use the pool, beach, etc. I was unsure which island to do the dolphin swim. Someone on here pointed out that GC is a tender port, so there's more risk that it could be missed. Sure enough on our cruise just about every excursion was cancelled, including beach excursions. It was a nice sunny day, but high waves, so there were problems with tendering. We stayed on the ship there. Of course any port could be missed for any reason, but just thought I'd share what happened to us.
 
We're stopping both places on the EBPC (which leaves on Friday!!!). When I looked to book, the dolphin swim was about $20 cheaper in Grand Cayman than anywhere else. Now, I'm sure they'll still get the same amount from me, probably the pictures they'll sell me will be more, but that led to me picking what I did. Also, it looks like many of the dolphin swims around the Caribbean/Mexico seem to be run by the same company (I can't speak to the specific ones you chose).

I do plan to do a chocolate excursion at Cozumel. And the one I chose takes you to some ruins, too. I figured if I was going to be that close to history, I wanted my kid to experience some of it (also taking him out of school for 2 weeks so it's something educational). Plus, like you said, it's something non-beachy and different.

So, I'm basically doing option 2 of what you asked about. I will let you know how it goes in about 3 weeks.

I've done the underwater boat thing before (in other places) and I find them blah (but my kid loves them).

We did the exact same cruise in Jan, 2019. We did the exact excursions that you're thinking of changing to. LOVED the dolphin experience in Grand Cayman. We are big history/ culture buffs in our family, so the Mayan Ruins/ Chocolate Factory was great for us. We came home with more chocolate bars than I have ever eaten cumulatively in my whole life! It was fun, educational and chocolatey.
