Western excursions with young children

Anyone have any suggestions for excursions on the western cruise (Cozumel and Grand Caymen specifically) for families with young children. We'll be going in October with our 2 DD's ages 4 and 7. There does not seem to be many excursions offered by DCL that our 4 year old can do.

We're going to try the Atlantis submarine trip for our 5 year-old at one (probably Grand Cayman) and do a 1/2 day beach trip maybe at Playa Del Sol at Cozumel. I think the submarine trip sounds fun for that age to see sea life she wouldn't be able to see until she was really able to snorkle well on her own! I'd be interested in other's experience with it?!
 
We are doing Cpt. Marvins stingray excursion with my 4 year old, booked right through them and not Disney.

We're booking everything through Disney.
You're right, we're limited because of DD's age (4) but in Cozumel, we plan to do the Chankanaab Sea Lion Discovery (can't wait to see that park)!
In GC, going to do the Stingray City Observatory and Island Tour. DD would be too afraid to do a dolphin excursion or stingray excursion where she's in the water with them.
