I guess I'm in the minority here, but you asked for opinions so here's mine

for what it's worth. I have followed a controlled-carb (not low carb) eating plan to regulate my hyperinsulinemia for over 6 years now. I lost 62 lbs and have kept them off. Because this is now not a "diet" but a "Way of Eating" for me, I do not ever consider going off plan. In fact, I haven't eaten off plan in over 3 years (the first 3 years I thought I could get away with "little cheats"

, which are never as little as they seem).
In these past 3 years I've been on 3 cruises, 2 trips to WDW, countless business & pleasure trips to the US (NY, DC, WA, CA, CO, VA, MD, MA, FL other than WDW

), Canada, and I just came back from 10 days in Spain, and I have kept to my eating plan on all those trips. When I travel I am a bit more flexible regarding what I eat, not so strict about balancing my carbs & protein, and I even eat dessert on occasion, if it's really carbworthy

. But I do follow the basics of my plan (carbs are limited to one meal a day, which means no snacking on Dole Whips,

, cookies, pastries... sad, I know

)
My suggestion to you would be to look over the menus on allears.net, and decide what things are must-have splurges, things that are WDW experiences, and choose a few to have as treats. That might be a good compromise between throwing caution to the wind and depriving yourself of anything good to eat!
