OP, I live in Las Vegas, so feel free to PM me if you have any specific questions.
Some suggestions depend on whether you will be renting a car/what month are you thinking of visiting?
In terms of buffets, you generally get what you pay for, with the exception of some of the Stations casinos (geared to locals and not on the Strip, but have very reasonable, good buffets). If you want to go to a "nice" dinner, I recommend Mon Ami Gabi in the Paris - about $32 for a great filet (there are a number of steakhouses in townthat serve everything a la carte and it's $50 for a steak and $12 for a potato
). Agree that should check out Paris rates - nice atmosphere and across from the Bellagio, so you can enjoy the water show without paying Bellagio price.
Beatles Love is my favorite show, but can be pricey. We saw it when they were running a deal, buy 1 ticket, get the second for half price. Check on-line and half-price tix is good idea if you are willing to take your chances as to availability. The last "Classic Vegas" show is Bally's Jubilee - beware that it is topless (except for early Saturday night show); it reminded me of a topless Lawrence Welk show, in a good way (if that makes sense).
Don't pay full price, but would be fun half-price (even the top covered version).
You could do an Elvis officiated vow renewal - way cheaper than a DFTW VR!
