weekend "power cooking"

for the third weekend in a row i've gotten the urge to cook massive amounts of food for my relativly small family of 4. it's worked out incredibly well in that we've munched left-overs and had plenty of lunch stuff for the better part of the next week.

weekend ones menu included-huge bowl of macaroni salad, huge container of mac and cheese (both from scratch) and big platter of chicken.

weekend twos-homemade pasta sauce, meatballs, 2 types of manacotti (meat and cheese), corned beef/potatos/carrotts/cabbage.

this weekend-homemade beef/veggie soup and3 types of enchiladas (beef/chicken/cheese) both red and green (which will come with rice and refried beans).

anyone else "power cook" on the weekends to avoid trying to figure out dinners/lunches for the next week? would love so more ideas.
 
I wish I did! I'm so exhausted from the work week I end up spending a good part of my weekend doing nothing and resting my brain. :) I used to love cooking but unfortunately my kitchen hasn't seen a lot of action lately. I've been thinking of trying one of those dinner places where you make a lot at once.
 
I just got back from the grocery store with my power cook items! I am hoping this will last for about 2 weeks.

Pot roast for pot roast with potatoes and carrots
next meal beef and noodles w/mashed potatoes

pork roast with roasted potatoes and onions
pulled pork sandwiches
Hash

chicken breast for grilled chicken breasts
white chili
chicken and rice

whole ham
ham dinner with cheesy potatoes and green beans
ham loaf
ham salad
ham with mac and cheese

Its so nice to have your meat cooked so all you have to do is fix the veggies and sides and re-heat your meat!
 

When I ahve time I love to do this. I usually have to work about 2 weekends out of the month so its not always possible. I also have done Dream Dinners a few times which really helped inspire me to do more "cooking in advance"

This weekend.....actually starting in a few minutes and look what time it is....a big pot of chicken gumbo, a cheesy chicken pot pie and a big pot of meat sauce.
