Your best bet on responses is email. All of the coordinators are very busy and they do tend to focus on the events they have today, tomorrow, or next week (and that is totally understandable).
I was usually able to get a response via email within a day or two...phone calls usually took a little longer. If you haven't gotten a response within a couple of days, send another email.
If you are an intimate, you don't really sign a formal contract. You pay your deposit, fill out the planning kit and pay the balance when it's due and that's pretty much it. The formal contracts are really only for the custom weddings because there are specific minimum expenditures to meet.
Also, you are still a couple of months out. I know this sounds bad, but while we spend months and months agonizing over the details of our intimate weddings, I have started to think that Disney almost throws them together at the last minute!

And that's not a bad thing!!! Remember that Disney does over 1000 weddings a year (that averages out to about 3 a day!!!) and my guess is most of them are intimates. If you do something that often, you've got a plan of action, and it runs like a well oiled machine...so, to Disney, you still have plenty of time to plan!!!
