I have two kids, 3 and 1. Which moderate do you think would be the best? Also, we were thinking of going in Feb but would it be too cold to swim?

Hmm . . . might depend on how much walking you want to do. All of them also have pro's and con's. While Coronado Springs is huge, we liked the cart that loops around all day. If we were to go back to a mod, we would choose CSR.

On the weather part - it's almost always a gamble in Orlando. Swimming weather will not be guaranteed. Pack the suits and see what happens.
 
I have been several times in February and always been able to swim for at least part of the trip. The later you go in Feb, the more likely you will have better weather for swimming.
