You wouldn't have enough time in a park to justify using up a day of your passes. So in your shoes, I'd have a nice relaxing dinner at DTD and then walk around and shop, then turn in early to get a good nights sleep before hitting the parks the next morning.
Or, you could just hang out by the hotel pool, I always find I never spend as much time at the pool as I want when on vacation.
Flight gets in at 7:30 or you are estimating you will be at the resort area by that time? If your flight gets in at that time, what airport?
I would probably go to downtown Disney and walk around- shop and eat. Maybe watch the fireworks from the pool deck at PP. I probably would not use a day off a park hopper to get in to the park that late at night.
Unless you have extra days on your hopper, I would just hang out in dtd or at the hotel pool. Or, as I said, watch the fireworks from the pool deck at PP.

Yeah, on a Thursday, I think DL is open as late as 8 p.m. and DCA till 6. DTD stays open till 2 a.m. (for your shopping convenience, as they say! ) so if I were coming in so late, I'd hang out there, eat at a good restaurant and chill at the hotel for the rest of the night.
I would get a preferred seating for dinner in advance. Waits on Saturday's can be long........ though not always. After a long flight I would personally prefer to have an informal dinner and hit the sack to prepare for a long day in the parks. Why not relax, order room service and enjoy the hotel room for a change. We never do that.
