WDW Veteran's First Trip

I am accompanying my DH on a work trip in a few weeks and we plan to visit DL for the first time. We take our kids each year to WDW and are Disney nuts. So we are beyond excited...but the kids don't know yet that we will be visiting DL-without them. Gasp! However I'm looking forward to spending the time alone with my DH being big kids! It's been a different experience planning this trip vs WDW. One notable difference is the sense that I don't need to book dining reservations too far in advance, which is a good thing because I have not yet decided where to have dinner. We don't want to spend a million dollars but it can be a table service restaurant. Any suggestions would be appreciated.

Anyway-I just wanted to share my good good news & excitement!
 
I'd ask this over on the main Disneyland board and you will get more answers.

A very "Disneyland" experience would be to have a meal at the Blue Bayou inside POTC. Set up sort of like the restaurant inside Mexico at Epcot. Not cheap but far from the most expensive place at DLR.
