WDW Trip is over, now to plan DL. Feeling completely lost!!

That's too bad!! Like I said, not a deal breaker, but knowing they can be done (and are at POFQ in WDW) kind of makes you sad when they aren't.

They make them GF at French Quarter??? I didn't know that. Separate fryer and everything?
 
Carthay Circle, Napa Rose for nice special adult dinners, Minnie and Friends if you want a more fun classic character breakfast inside the park (we aren’t huge fans of the food but it’s not terrible and you get the view of the castle while you eat!)! Blue Bayou is neat but IMHO it’s kinda gimmicky for the price.
And yes, 100% I would spring for MaxPass and use it! You’ll also get free photo downloads including ride photos and any photopass photos.

As far as I know, yes. Most QS places at WDW have a separate fryer for fries - which in researching does not always happen at DL? - and that includes POFQ. (Riverside does not have beignets gluten or otherwise.) So I would imagine they use the same dedicated fryer for beignets.
 

My experience with single rider for Indy is that it is not always available. When it is, though, it has NEVER been near as long a wait as the regular line, in fact, significantly less time. You may have to wait a bit in a couple spots, but it does go pretty quick.
 
While I've been to Disneyland more times then I can count, I went on my first Solo trip back in September. You are going to have a great time.

I would highly recommend getting MaxPass so you can make the most of your time there. Also if you get MaxPass make sure to use it to get your free digital picture downloads with PhotoPass photographers and for on ride photos.

Also use single rider lines, but be smart about them! If you get in a single rider line and there are 50 people in front of you know you might be smarter using MaxPass to just get a fastpass for a later time. (For example I've seen people wait 60 minutes in the single rider line at Splash Mt. when the posted wait time for the regular line was 45 minutes and the fastpass time was just a little over an hour out.)

I put together a video of my tips for solo trips (I know you said you didn't like videos for learning but hopefully it isn't too painful)

And for Character meals as others have said, if you want lots of Characters go to Plaza Inn, if you are ok with fewer (but more unique) characters but want excellent food quality go with Storytellers cafe:

You'll have a great time! Solo trips can be really fun. Make sure to take the time to just take in some of the things that you love most that you might not do if you were with a group rushing around the park.

I usually travel solo, so that's not new. But DL feels VERY new since like I said, the only other time I was there (DL Half Weekend 2011) there were walls everywhere, I was with other people and having to do what they wanted, and we were trying to cram a lot besides the parks in, so I felt rushed when we were there. I'm excited to do all I can at my pace! :)

I am gluten free and going to DL in July for the first time since being gf so I am in same situation! From all my research, it looks like WDW has better options, but there's still plenty at DL! I did read that they have gf beignets at Cafe Orleans though!! So there is hope for you to get one :)
