Want to doctor up leftover soup... think this will work?

Hi all. I have leftover creamy potato leek soup in the fridge that I'd like to doctor up tonight for dinner. By itself, it's not a really filling meal- we had to pair it with a gluten-free grilled cheese sandwich on Sunday. But instead of doing that, do you think it would be good if I added redskin potatoes and maybe some bacon to it to make it a more hearty meal? I don't want the soup to go to waste, but I don't want to have to make a grilled cheese or something to go with it either (aka another dirty pan).

Other suggestions?
 
That sounds good to me. You could also add some white beans.
 
I am sure it would work. I add bacon to potato soup all the time. My question is, wouldn't boiling extra potatoes and frying bacon create 2 extra dirty pans? :confused3

OH, I cook bacon in the oven with a bunch of aluminum foil covering the baking sheet, so no clean up there. I was thinking about cooking the potatoes actually IN the soup pot... but maybe I should steam them first instead....

Cook the potatoes first, then add to the leftover soup.
 
You could roast the cut potatoes in the oven after you've cooked the bacon, reusing the same pan.
 
I frequently add bacon to potato soup! I like to make a basic potato soup recipe and freeze it and then when I want to use it I add to it. It is also delicious with cubed ham if you have any on hand...or I think maybe you can buy pre cooked cubed ham.

As for adding more potatoes, it probably isn't necessary, but if you really want to add them you can...just make sure you cook them before adding them to the soup.
 
I like to add frozen shredded hashbrowns and cream cheese and I put it in the crockpot. I know this response is late but maybe it will help next time. :)
 
This is most likely too late, but you can add diced ham or leftover roast beef to add some "umph" to it. You could also add corn, broccoli or any type of veggie. Let us know what you ended up doing! :)
 
Yes but........cook the bacon till really crisp. I made some potato soup recently and did not cook the bacon enough.
 
Thanks everyone! My plan backfired. The potoatoes I wanted to use went bad, so then I decided to just cook up the bacon. Went to put the bacon on the pan and there were black spots on it (EEK!!) so I tossed it.

SO, DH made us grilled cheese to dip into the soup :rotfl2: :lmao: :rotfl:

Oh well, it was still good. I'll try again next week. :laughing:
