I can certainly understand your frustration- I would not be happy if I had plans for something kids specifically asked for and it got "substituted". It would definitely stress me out.
BUT- Before cancelling or buying anything else, I would check and see if the mixrs are something they would want. It sounds like a significant upgrade. They may have asked for the entry level, because they knew that was the best as kids they were going to get. Depending on their age, I think there is a good chance they might be thrilled with the higher level headphones and the envy of their friends! The mixrs are still called "Beats"- just "Beats Mixrs" instead of "Beats Solo" and I think they look very similar, just a significantly better quality. You might be getting a substitute that will make you look like a rock star in their eyes.
I've heard that Wal-mart is also substituting the 32 inch Funai TV that was on its 1 hour guarantee with a Samsung for some customers. That is a big upgrade. I would be thrilled with that one. Almost makes me wish I would have gone and gotten in line for that TV and been at the tail end of the guarantees- except I think they are both 720p instead of 1080p- so neither would be acceptable to DH.
