Solo travel- I want to either 1) book a table close to night shows/fireworks times, or 2) sit at bar for meal etc for same.... which is preferable? Can you see fireworks from here? Never been but the menu looks great

Yes, you can see the fireworks and water pageant from the shores of Poly Tower. Not sure that you would see them from inside the restaurant though.
 
I’m staying at the island tower now. You should be able to see the fireworks from most of the seats outside. The view is relatively unobstructed. At the bar you would have your back to the castle but could turn around
