Epcot would be my second choice if you did not want to do Magic Kingdom. Although if you have never been to the MK I would most definitely choose that one. Especially considering the ages of your children. Have fun!!
Initially I would say MK, but since you're going to DLR I'd suggest a different park. My 7yo loves EPCOT, but the best rides have height requirements that your 2.5yo wouldn't meet. If you've never been there, AK is lots of fun. Some people think there isn't much there, but the shows are fantastic and it's a great place to meet the characters. Personally DHS isn't that appealing to me, but they do have some neat things like the Beauty and the Beast and Little Mermaid shows (although that one can be scary). If your little one likes Playhouse Disney that would be a big hit. And of course Toy Story MM. They have that at DLR also, but it doesn't have a FP there so it always has a huge line. Hmm, tough choice!!
I think Epcot is a good selection for the young and older mix. The countries are great to visit with a little something for the young children, then the rides in the lands are great for very little kids.
When my children were younger (4 and 3 at the time), they had an awesome time at Epcot. They talked about that park months after and hardly mentioned MK. Go figure...
