We were just there last weekend for our first stay. I have no idea about the weather for your stay, but for us it was great beach/pool weather. The resort is extremely low-key. The beach was never real busy, but the pool area was busier on the weekend but by no means crowded. There were a few craft activities in the pool area (extra fee) and a DJ with pool games but I think that was mostly just on the weekends. Across the street is a recreation area with sports courts and stuff, but it was way too hot to use them when we were there.
The dining options were still under refurbishment when we were there and I wasn't overly thrilled with the temporary replacements so we didn't really eat anything at the resort. Expect Disney prices for dining. There is no ice cream really except the pricey Disney bars in the very small gift shop. We did breakfast and lunch in our room and ventured out for dinners. There are some decent restaurants within a 10 minute drive. But overall, the area is very very quiet. My kids were bored in the evenings. We ended up picking up movies at the red box. All the resort activities closed around 6:30 so we had very disappointed kids who wanted to play mini golf the one night after dinner and couldn't. I can't emphasize enough how low key and quiet it is, and not quite what we were expecting. I also really missed all the little Disney theming. There was very little at the resort. It was nice and well maintained, staff was nice, but I missed the little hidden themed elements.
