First time going to Vero Beach after a stay at OKW - just wondering if one has to make reservations for restaurants prior to arriving as we do for WDW. Any suggestions - good or bad for restaurants on site. We will have a car and will venture away but will look at Vero thread for off site restaurant suggestions. Thanks!!

I would make ADR's for the specialty dining events like character breakfast and the Sunday brunch.....I think there is a pirate dinner now or something ?

But for regular meals we always found seating to be fairly easy. If you want a shorter wait, try dinner earlier than 5:30 or later than 8:30. It can get a little busy with waits up to 30 min at peak dinner times.
 
Found the info on the Pirate dinner (if this is something you might be interested in, I'd suggest ADR's). They had it in 2009 and 2010....I'd assume it's returning in 2011 :

Disney's Vero Beach Resort introduces Pirate Character Dinner

On Monday nights (5-10 p.m.) from Memorial Day (May 25, 2009) through Labor Day (Sept. 7, 2009), Shutters at Disney's Vero Beach Resort hosts the new Pirate Character Dinner, featuring appearances by Pirate Donald and Pirate Goofy, along with a family-style, all-you-care-to-eat dinner. Think of it as an epic summer blockbuster, only with less Johnny Depp and more pulled pork.

The bounty includes such swashbuckling highlights as guava barbeque ribs, rotisserie chicken, brisket, barbeque pulled pork, roasted potatoes, corn on the cob and baked beans. (For the traditional Shutters menu, walk the plank next door to Sonya's. Sorry, no more pirate references.)

The cost is $26.99 for adults and $12.99 for children ages 3-9. Advance reservations are recommended, so call (772)234-2180 to reserve your place at the table, lest ye end up in Davey Jones' locker (okay, one more pirate reference).

It's all part of Pirate Day, filling summer Mondays with pirate-themed events and recreational activities. (Note that while these activities are fun for everyone, they're even more fun for those dressed in pirate costumes, so pack accordingly.)

We were there on October 5-10 last fall. They always had room for the brunch and dinner at peak times in Shutters. Maybe it was just a slow time of year. If you get a chance to go off-site I recommend Squid Lips. It's just a short drive and we enjoyed it. Right next door is a pizza/pasta place that I think is named Orchid Pizza. It is take-out only and the food was good. The staff were not very friendly though. We walked there and back one night.
