We stayed at Vero Beach this past December. There were plenty of activities, including tie dye Mickey shirts and a lot of other craft activities. There were scavenger hunts, Bingo at the pool, geocaching, bocce ball lessons, etc. Bike rental and mini-golf were up and running. It was our first trip so I can't compare the mini-golf course to anything else but it was fine.
Masks are required everywhere outdoors at the resort except for the pool deck and the beach. Even though it was chilly when we were there, the hot tub was quite crowded (to where I wouldn't have felt safe going in- and yes, more crowded than at regular Disney World resorts where we also visited same trip) for almost the entire day every day, so go immediately upon pool opening if that matters to you.
Wind and Waves was a solid 3-star restaurant (mainline Disney table service quality) and we ate there twice a day. Not gourmet, but not bad at all and we also liked the ambiance there. If a dish isn't to your liking, send it back and get something different- I did that once or twice out of the several times we dined there without any incident or being charged for the sent back dish. I'm not a foodie so some others will have harsher opinions, but I definitely recommend trying it early on in the trip rather than just assuming you won't like it.
