Venison recipes?

DH told a few friends how much he loves deer meat. Well, they brought over steaks and ground meat. I am not a big fan but I want to use them up.

Any good recipes anyone can share?
 
use the ground meat as you would beef ground meat. I do spaghetti, chili, enchilidas, really everything! I never purchase ground meat.

for the steaks, I place the steaks (chunked as if for beef stew) in a roaster, add chunks of pork, whole mushrooms, small potaotos, carrots and onion. I mix italian dressing, worchershire sauce and seasonings. Pour over all. Place covered into a 300 oven for 2 hours or more. Serve over rice.
 
Venison is lean, so keep that in mind while cooking. It will dry out really fast. The option would be to add some fat to it, I tend to use bacon. If the taste is what you don't care for, you can try soak in salt water before cooking to conteract the "gamey" taste.
 
Have you tried a taste of the venison he got? Some tastes more gamey than others. We get a lot of moose meat from my inlaws and the last batch you couldn't even tell it was moose, so I didn't have to alter cooking as much.

Anyways, for the ones that taste more gamey, I usually mix the ground meat 1/2 and 1/2 with pork or regular hamburger to make meatballs, or will cook up 1/2 and 1/2 with onions & spices to use in spag sauce, etc. Then you can't notice the taste.

I mostly cook ours in the slow cooker with some broth and lots of spices. Just use the same recipies you would use for beef recipes. Pulled bbq beef, stews, etc. I don't care for it plain too much, but mixed in with sauces and stuff I don't notice the difference, and neither do my kids.
 

Yes it us very lean so cook it on a lower heat than you would beef steak if grilling or pan frying. To make the steaks tender marinate for 24 hours , or just give a light sear to them and cook in a crockpot with a smothered recipe (like you would smothered pork chops) you can cook in gravy, broth, cream of something soup. Serve with rice or mashed potatoes.
 
The only venison I've ever really liked was smoked and chipped. We ate it on crackers with cheese. Yum! I don't really like it because I like a marbled meat. I think venison lacks flavor due to the randomness of the diet of the deer. Mix the ground venison with beef or pork and make a meatloaf. Be sure to always add fat when dealing with venison-bacon, pork, butter. There was one crock pot recipe my sister said she tried. A venison roast with a dry packet of ranch dressing, a dry packet of au jus(I think she said McCormick) and a stick of butter on top-salted butter. Cook on low for at least 5 hours and prefereably 8-no water. She said it pulled apart and was tasty. I didn't eat it.
 
You can use the burger in anything that you use burger in like Chili. You could mix it with some pork for a meat loaf. You will never taste the difference in it.

If the steaks are the tenderloins they are nice and tender. Just fry them up in some onions. They taste a little different but usually not bad. If who ever dressed it knew what they were doing it will be very good!
 
if you cut up the steaks into portions and then soak them in whole milk and soak them for two days, then chicken fry the meat it is REALLY GOOD!! :)
 
Take some of your strips of meat and cut them into about 3 in round by 1 in thick pieces. Take these chunks of meat and put them in either a lidded bowl or a zip lock bag with zesty Italian salad dressing and let sit in fridge for several hours. Take these and batter and fry. We put them on a biscuit and they are good.

you could make jerky w/ the ground meat-yum!
