Vegetarians at Prime Time?

We have a grand gathering going to the World in December. One of our families is vegetarian, and I am wondering if the Prime Time Chefs would be able to work with them to get something that they would enjoy that was more than side dishes.

Anyone have any experience with this?

The roasted pepper is vegetarian, would the person not like that? I was a vegetarian for 13 years and often eat veg now, but the last couple times I've been I got meat there, so I haven't tried that dish.
 
When our vegetarian friend (who didn't want to make a "big fuss" and call ahead of time) ate there with us, she ordered the turkey sandwich without the turkey. Once we explained to the server why, four alternate vegetarian dishes were offered to her. She ended up with a veggie burger and fries for her meal. None of the offerings were on the normal menu.
 
There has always been at least one vegetarian entree on the normal menu, and usually you can get things like veggie burgers even if not on the menu.
