Vegetarian Options?

I'm also vegetarian and have always found something to eat at any restaurant. You can call in advance and let them know of any dining restrictions but most places have a separate vegetarian menu that you can ask for. I personally like the hibachi at Japan, San Angel in Mexico, the spaetzle at Germany, and the veggie burger at Cosmic Ray's in MK.

You say he doesn't eat meat, but does he eat fish?
Even if he doesn't, there are plenty of choices at any of the restaurants. There are always pasta dishes.

I have an 18 year old son who is vegetarian (the remaining 4 of us eat meat). He's not overly picky about his food (for example, he'd eat a soup with a beef broth base), he just doesn't like to eat meat.

Any suggestions on best restaurants for us? We'll be there for 4 full days so we need a variety. I'd like to avoid the 4 of us eating at one place and him eating at another.

If you're looking for table service, you'll have better luck in variety than counter service. Mythos usually has a couple things on their menu that are vegetarian, and is always willing to make you some sort of pasta dish if you don't see something on the menu you like. Lombard's and Confisco also usually have a pasta dish or two. In City Walk, Pastamore is your best bet, even for non-pasta dishes, but the veggie burger at Margaritaville is also excellent.

For quick service, in most places you're limited to veggie burgers and side salads, though Thunder Falls Terrace has some great side dishes like roasted corn, rice and beans, that could be made into a satisfying meal.

Veggie burgers, pasta, and side salads made up most of my meals while I was there. By the end, I really was craving a big pile of fresh vegetables.

Sounds like we'll try to plan one big meal a day (Mythos or at City Walk) and then snack through the parks the rest of the day. He'll eat side dishes and veggie burgers are fine... but we're in Florida for 2 full weeks, Universal at the end of it, and I'm betting he's going to be tired of veggie burgers by then.
