Okay so I'm off to disneyland at the very beginning of December and my Girlfriend is vegetarian, what's the selection of food like in the parks for veggies?

I try to avoid white foods too, but can't always do it when traveling.
Here's a list of vegetarian options I've saved from other posts on the DIS:
Disneyland:
- Rancho del Zocalo - Beans, rice, tortillas are vegan-friendly. They have a burrito you can get with veggies, but make sure you ask for no cheese
- Village Haus - Veggie burgers are vegan - no mayo or cheese
- Redd Rocket - Pasta with Tomato-Basil sauce is vegan
- Bengal BBQ - Veggie Kebab
- Gumbo and Chili Bread Bowls are vegan as well
- Blue Bayou - Mushroom entree, though my friend always speaks with the chef to order a Pasta Primavera type food.
fried cheese sticks at the Golden Horseshoe.
The Hungry Bread Restaurant has a good veggie burger which is not on the displayed menu - you just have to ask for it.
There's also a good entree salad with grains at the French Market Restaurant (I think)
Jolly Holiday Bakery - veggie salad with barley and spelt.
DCA:
- Cucina Cucamonga - same as Rancho del Zocalo
- Pacific Wharf Cafe - Chili
- Lucky Fortune Cookery - stir fries with tofu, all sauces except curry sauce are vegan (that's vegetarian)
I'm headed to the parks later this week and I'm going to try to put together and more comprehensive and updated list. I'll upload it when I'm done because I know what a challenge being a vegetarian on vacation can be - especially finding healthy protein sources.

In fact I think that's the only way carthay works for veggies, yes? They want things to be fresh and seasonal, so they just whip something up instead of having a set menu for vegetarians? That's how it was explained to me in the past.
