Let me start by saying I am veggie-phobic. I've never enjoyed veggies, but I'm looking into getting a vegetarian cookbook and I have no idea where to start. Any suggestions? I have 3 kids also so one that has kid friendly ideas might be useful. I'm looking into this because my son has a kidney disorder and a veggie diet may help.
 
Let me start by saying...it ain't all about veggies. There's lot of dishes that have small amounts or no veggies at all.

There's lot of books in the market place. I have so many vegetarian type cookbooks and I take receipe's from each one. Go to your local book store and browse the cooking section for Vegetarian cook books. Look at the types of dishes they have in the cook book and if it is something you would be interested in making. Like all cook books, you need to browse through them to see what is right for you.

Most important...make sure he eats a balanced meal w/ the right amount of protein. Some people get caught up in the "Veggie" lifestyle and don't pay attention to the balance. You can get plenty of protein and sometimes more than meat though plant food. You just need to do your homework.

I've been a vegetarian for over 30 years.
