portabella mushrooms on the grill with a salad and dressing with vegetable oil. Go buy some artichokes, steam them and serve with non egg/dairy dressing(try Annies). Beer is good!! Fruit salad makes a great dessert. There is such a thing as tofu cheese. You could get some tofu, press it and marinate it in a no animal ingredient dressing like tamari. Then broil it. All veggies are great steamed or grilled with olive oil and garlic.

A lot of Indian food is vegan-- maybe try looking up come lentil dishes? I think Jeera Aloo is vegan and is super yummy!
 
Thanks for all the great suggestions. I was racking my brain for ideas and came up with nothing.

Few problems:

Tofu gives me the heebeejeebees. I had a bad experience with it a few year back and have since not built up the courage to try it again.

The Husband who will also be eating does not eat mushrooms.

My ideas:

Risotto with only adding the parm. to the non-vegan plates
Texas Caviar (beans, corn, veggies)
Fruit
Beer

Most pasta doesn't contain eggs or milk (that is typically found in "fresh" pasta). I eats lots of it! :hippie:

Most pestos are not vegan due to them containing Parmesan cheese.
 
Here's a quick and easy one that really does taste good! I've never had chicken salad so I can't say that it tastes like it, but it is yummy :goodvibes

Yummy Mock Chicken Salad

Ingredients (use vegan versions):

1 can chickpeas
1 green pepper (diced)
1/2 onion (diced)
about 1/2 cup Nayonaise or Ranch dressing
salt and pepper to taste

Directions:

Pour the beans in a medium bowl and mash with a potato masher until chunky. Toss in green pepper, onion, dressing and seasoning and stir. You can also substitute celery for the green pepper, I just prefer green pepper.

You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato. Delicious! I have served this to plenty of meat eaters and they love it!

Serves: 4

Preparation time: 5 minutes

Big green salad with some sort of bean on top

Vegetable curry with rice

Stuffed mushrooms cooked on the BBQ with corn on the cob and green salad

Red kidney bean chilli and rice

Vegetarian pizza with soy cheese

Stack of roasted veggies.....peppers, eggplant, tomato, zuchinni

Vegetable patties and salad

Veggie burger

It really is NOT that difficult to MAKE food for a vegan. It is much more difficult to go out to eat with one...
 
I made a really really good berry cheesecake that was vegan & also scoffed by the rest of my work. Google berry cheesecake. It uses tofutti which is imitation cream cheese & tastes good. There are regular biscuits which do not contain milk solids for the base & nuttlex instead of butter for the base. Super dark chocolate does not have milk in it for the decoration

Any substitues you use, make sure that they say "vegan" or you have read the ingredients a lot of soy cheese etc have whey (milk protein) and therefore are not vegan.
Also not all meat-substitutes are vegan...gardenburgers have cheese, unless they specfically say vegan. And not all vegans eat them either, my daughter does not.

We read the labels of everything we put in the cart to see if it is "safe." We have been surprised more than once. We bought a creme soda that ended up having honey it it, which makes it non-vegan.
 
Don't forget beans! As a vegetarian black beans & rice is one of my favorite dishes.

a nice salad with mixed greens, black beans, corn, tomatoes, and whatever else with a citrus vinagrette

angel hair pasta with julienned vegetables, I toss it in a little olive oil and squeeze a little lemon juice over it. For the non vegans I have grated cheese on the side.

if you make your own tomato sauce you can be sure it is vegan

There are excellent vegan pastas out there.

I would serve a green salad with grilled vegetables think asparagus, portabello mushrooms, leeks. You can buy a vegan bread grill it with a little olive oil and garlic and serve it with hummus. There is also really good vegan ice cream made from coconut milk.

The tofutti was recommended to me by a vegan colleague who describes herself as absolutely feral - even her cat is vegan and she cannot bring herself to give the cat the eggs she collects from the rescue chickens she has in the back yard, when these chickens have a goood life.

So when i am shopping for the cheesecake ingredients I am on the phone to her checking if the chocolate, which did not contain any milk products was still ok because it had a label declaring it was processed on machinery that also processes milk, egg etc. When I baked the cheesecake I had just baked some 'regular' chocolate cakes and I made sure to use a new skewer for testing the cakes so there was no chance of cross contamination.
