i, too, will answer what i can and point you to resources that can help.
1) What characters will we see on our cruise and are they out often?
basically, all the main characters....mickey, minnie, goofy, pluto, chip, dale are the mainstays, plus others. your navigator will list who is where and when. to see a real navigator to get an idea, go here:

2) What would be okay to wear to our three meals at each restaurant?
since you mention nassau, i'm gathering you are on the wonder and not the magic. dress tends to be a bit less formal on the wonder. as nedleycan mentioned, most people are in shorts and t-shirts for breakfast and lunch, even in the sit-down restaurants. you'll also find a lot with beach wear/coverups over their suits. for dinner, most (not all...some people just don't follow the request of the cruise line) men wear slacks and a polo (you'll see some folks in jeans, though
dcl specifically requests no jeans); some will wear a jacket as well. women tend to be in informal dresses or pant suits. at palos, as nedleycan stated, couples tend to dress a little nicer. my dh wore a suit the first time, but since then has worn slacks, polo and jacket. a jacket is "required," meaning they want men to wear one, but i haven't seen anyone turned away for not having one. women tend to be in a dressier dress or pant suit...cocktail dresses, not formalwear. your 2yo will be fine in just about anything so long as it's not jeans (for your palo's night, you can check him/her into flounders reef, but make sure you request it at the first opportunity on embarkation day).
3) Are there things for kids to eat at the restaurant? Wear can we get menus to them?

http://www.castawayclub.com) has children's menus posted as well. click on the food & wine link. the kids' menu doesn't change much as it is standard fare the kids will like/eat....mac and cheese, spaghetti, chicken fingers (you get the picture). my boys (i have 3) have never had any complaints.
4)I read somewhere tht Lumiere is semi-formal, is this true or is is okay for slacks and polo shirt?
actually, lumiere's is on the magic, triton's is on the wonder. slacks and polo are fine, though many men will wear a jacket as well as it is a more formal restaurant than the other two. you can wear the same jacket to palo's.
5)How late can you order room service?
hmmm....good question. we've only ordered breakfast, so i don't know. i can let you know in june after our 7-day!
6) We have the early dinner and late show, what times are these at? Is this okay for a 2 1/2 year old?
early dinner is 6pm and show is 8:30pm. that is the best rotation for your little one as it is better for him/her to fall asleep at the show than in his/her plate!
7) Is Nassau for a 2 year old or would you recommend staying on the boat? If you stay on the boat are there activities for the kids?
personally, i would not take a 2yo into nassau to shop. it's small and crowded, and the locals are out on the street trying to get you into their shops to buy. if you want to shop, i think (not certain) that flounders is open to watch your little one while you go shopping. they give you a pager that will work on land as well as on the ship in the event there is a problem. if you want to do an excursion, the trip over to atlantis is one that is 2yo-friendly. the aquarium is something special to see, especially for the kids. then, there's the beach as well. if you decide to stay on the ship, there are a few activities and lots of pool time!
