We are going 12/29-1/5 with my parents. My mom uses a ECV and has a ADA car tag. We were going to valet for our breakfast ressies at GF and Boardwalk for convenience. I know regular resort parking has a time limit of 3 hrs, but is that true for valet as well? We were going to do a monorail resort tour after eating at GF. Thanks!

Valet parking may be limited to resort guests only during that time.

We've never been given a time limit by a valet (or for self-parking for that matter), and we've never been told we couldn't valet park. But we've also never gone during the holidays, so that may make all the difference. I doubt you will have a problem parking for an ADR and a monorail tour, but you're going to get all kinds of answers to your question here. Calling Disney to ask never helps because they will rarely answer. The only way to find out for sure is to ask the security guard when you get to the resort, but that's no help at all in planning. If you can, it would be helpful to post how this turns out for you. It seems that when people report back, the answer is almost aways that they had no problem.

So they may not let us park even if we have reservations at the resort for a meal? That would be difficult for us with hauling an ECV around...

I honestly don’t think you are going to have any problem whatsoever, especially with the ADA tag. The advice you get here about parking tends to be very conservative - taking into account worst-case scenarios.
