Do you chose the wine tasting when you sit down or make reservations now.
What is the chefs table?
 
You choose the wine pairing at the time your order your meal. Your menu will have what the wines will be so you can decide if you want it or not. The wine you receive will depend on the courses you select but the price for the pairing will be the same for everyone.

The chef's table is a one of a kind dining experience set up in the kitchen area. The food is personalized for you that evening by the chef and you will have interaction with the chef to discuss what you like/dislike, etc. There is only one table so you have to book it early. The cost for this meal is a bit higher than those in the main dining room. Also if you are using the DDE discount, it cannot be used for a chef's table experience.

The main dining room is still intimate although not totally private. I would say there is 16-20 tables in there but I've never actually counted.
 
Also, the wine pairings are listed on the menu under the particular dish so you can see what you're getting. I'm not a big Chardonnay fan so have asked for another recommendation on occasion.
