We did V&A for our honeymoon. It was fabulous. We didn't do the queen's room or chef's table though. If you splurge on the upper level stuff, I wouldn't recommend the queen's room; according to Disney's site, there are four other tables in the room, and if you're in the main room, there will be more than four other tables, but they are spaced so far apart that you will only see 4-6. We were so far away from others that it was like they weren't even there. We couldn't hear them or anything.
If you're trying to decide between V&A & BOG, V&A is a sure winner. It's the best food I've ever had, and it's visually pleasing. The attentiveness of the waitstaff is like nothing I've experienced as a common person... lol. BOG is really cramped. They put you practically on top of each other. We ate there, too, and I could almost touch the couple next to us elbow-to-elbow. Literally, if I were to hold my arms out at my sides, I would have hit people on each side. That's how close you are. V&A will cost you 3-4x more, but it will be a much more memorable experience.
We didn't have any trouble booking V&A 180 days out. I also booked V&A for my upcoming trip, and I booked about 20 days after the 180 window.
EDIT: Booking BOG, especially on a party night, is going to be quite hard. Just a heads up. The only reason we got BOG is because a DISer gave us her reservation -- and I was up and had the page loaded at 6 a.m., 180 days out. It seems like it hasn't improved, either. I've been checking daily for BOG for our upcoming trip with no luck, and I'm looking for both party nights of that particular week..
