Using hotel sitter program

I'm taking my 2 year old and 5 year old to disney world by myself. I'd like to take my 5 year old out to Disney World by himself for one day while we are there to ride the big kid rides. He's short for his age but I'm hoping for the rides that you have to be 40 inches to ride by the time we go. I think this would include
Magic Kingdom: big thunder mountain,splash mountain, barnstormer, tomorrow land speedway, and stitches great escape
Epcot: soarin & test track
MGM Studios: star tours & tower of terror
Animal kingdom: dinosaur, kali river rapids,

Are there any that you would suggest not taking a 5 year old on? He likes big rides. I'm thinking about getting a park hopper and then hitting up as many of these rides with my son on one day that we can't do with his little sister because of her size/age. Since my two year old won't be old enough for a child activity center (my preference vs being by herself with a sitter I don't know) I plan on using the in hotel room sitter service that disney suggests. Do you think it would be better for the sitter to stay at the hotel room with my two year old or get a ticket for the sitter so she can tag along with us? How long do you think it will take us to cover these rides?
 
Hugs for a fun trip with your little people. We took our 7 year old when he was five and we found the following:

Mk-He did BTMR and was fine but did not love it
Did not want to do Splash
We choose not to put him on Space
LOVES the Speedway but even your little one can do it
I refuse to do Stitch....It is dark and weird and many kids freak on it.

HS-He loved Star Tours
He would not go near TOT after going on Haunted Mansion and being scared. He still won't go on it at 7. It is scary.

AK-Dinosaur- We explained it is scary and jerky and he did not go on it. I have seen a lot of kids freak on it.
-Kali- too cold that trip but he was ridden before and was fine. Not scary.

Epcot- Soaring- LOVES it
-TT- For some reason he did not want to ride but its not scary and should be fine for most 5 year olds


Now the problem is that a lot of these rides can have long lines. You need to either hit them early or use FP. With the new rules you can only make 3 FP in one park each day, so hopping might not work too well. If you choose one day to do the park with him, maybe start at Epcot and do Soaring and TT first thing, then make you FP for the afternoon at MK and hit those rides. Depending on when you go....crowds may play a huge role in your plans too. Just an FYI---You can also take a sitter into the park with you if that might make you plans work smoother.
