Going to disneyland so figuring out how best to spend aeroplan pts.

Flights make you spend lots in taxes. And aeroplan doesn't have disneyland tickets only wdw tickets.

If you use them to rent a car, do you have to pay any taxes? Or is it straight pts only?

Points only. Nothing else due unless you use toll roads and don't pay as you go.

I've done it a couple of times before. The only extras may be charges for insurance. We didn't go for it, so it was only the Aeroplan miles.

Just remember, the best value for your miles is flights

I agree with the best value for your miles is typically flights. The only caveat I add to that is that if you can fly on a discount airline like Jetblue or Southwest from places like Buffalo then you need to compare the cost savings there versus car rental. I have found that for my needs, the car rental comes in at between 1%-2% of dollars spent, depending on time of year and who you rent with. If I adjust the cost of flight after I deduct what I would pay with Jetblue, taking all costs into consideration (driving to Buffalo, parking, etc.) I typically get less than 1% of dollars spent.
