Using A WDW Bus Question

We are going to WDW in a few weeks and we are staying off property.
If we park at Disney Springs, can we use a bus to go to The Poly for dinner? and then ride it to return back to Disney Springs?

If you have an ADR, just show it at the guard gate. Why add all the bus time to your day?

Because we’ll be using quick service and we won’t have an ADR (If we can even do quick service when not staying there)

Yes, you can do this. Both ways.

As above, your plan is fine - you can park at DS and ride the bus to and from Poly. And you can eat at the QS even if not staying there. If you try to mobile order in advance and get a warning that only resort guests can order, just close the warning and go on with your order.
