Urgent -Crock Pot Recipes needed!!!!!!

I go back to school this week, which translates into LOTS spent on eating OUT!!! I have a Crock Pot (Rival-oval) that I would like to attempt to use. I usually drop DS off at school and come home to study and head to school around 4pm. I would like DH and DS to ahve a meal waiting at home.

Does anyone have any recipes that are not too complicated? I wodul prefer ones that don't need "meat browning" ahead of time. What do you suggest?
 
Are you looking for "one pot" meals, or can you use things that still need noodles or rice? Do you have a preference for type of meat? I've listed a couple I use most often.

Drip Beef Sandwich

3-4 lb roast
2 c water
4 beef bouillon cubes or
4 tsp instant bouillon
3 tsp garlic powder
1 Tbl oregano
1 tsp coriander
1 tsp chili powder
½ tsp cardamom
1 tsp Worcestershire sauce
to taste Kitchen Bouquet
a few drops of Liquid Smoke
This combination of spices is what we like, but you can add/remove any you desire.

Put roast, water and all spices in crock pot and cook all day. (If you use a lean cut of beef, there's no need to worry about removing the fat.) Shred roast and put back in juices. Cook on low until ready to serve. This is really good on hard rolls with horseradish sauce & juice drizzled on it.

Roast Pork & Beans
pork roast
several cans Great Northern beans, drained
ketchup
brown sugar

Combine beans, ketchup & brown sugar in the crock. Place pork in crock & shift so that it sits down in the beans/sauce. It doesn't need to be covered with the beans. Cook all day.
[NOTE: This is great as leftovers, so we usually use 3 LARGE cans of beans for a family of 4.]

Five Flavors Chicken
3 - 4 lb chicken, boneless
2 cloves garlic
½ c honey
1½ tsp ginger, ground
½ c soy sauce
3 Tbl sherry
½ c crushed pineapple with juice (opt)
2 Tbl cornstarch
Mix garlic, honey, ginger, soy & sherry. (Can substitute orange or cranberry juice.) Dip chicken into mixture. Place chicken in crock. Mix pineapple with sauce & pour over chicken. Cook on low for 6 hours. Remove chicken. Blend cornstarch into juice; cook to thicken. Serve over rice or noodles.
[NOTE: Do NOT use bone-in chicken as the bones tend to "disintegrate" & become difficult to remove. You can substitute Wondra flour for the cornstarch.]

Beef Stroganoff

1½ lb lean stewing beef
1 onion, sliced
2 cans cream of mushroom soup
2 Tbl ketchup
2 tsp Worcestershire sauce
1 tsp pepper
½ pt sour cream

Place beef & onion in crock pot. Combine soup, ketchup, Worcestershire sauce & pepper. Add to slow cooker; mixing well. Cook on LOW 8 to 10 hours. Just before serving, add sour cream & heat through. Serve over noodles.

Hot Chicken Salad

2½ c cooked chicken, diced
1 c toasted almonds
2 c celery, diagonally sliced
½ c green pepper, diced
3 Tbl lemon juice
1 c mayonnaise
3 Tbl grated onion
1 c process cheese, cubed
1 c potato chips, crushed
½ c grated parmesan cheese
Toasted English muffins

Combine all ingredients in crock pot except for half the process cheese, half the potato chips, half the parmesan cheese, and of course the English muffins.
Cover and cook on low for 4-6 hours. Just before serving, sprinkle with remaining cheeses and potato chips. Serve on toasted English muffins.

[NOTE: Good with or without the chips.]
 
You're welcome! I was looking earlier for this one, but completely forgot I'd started a "Search". :rolleyes: I hestitated a lone time before making it because some of the ingredients seemed odd (like cottage cheese) but it was very good! ....even though I used one of those flavored cottage cheeses with oranges & either pineapple or cherries as it was all I had. :blush: I skipped the bell peppers, though.

3-Cheese Chicken & Noodles

3 c chopped cooked chicken
1½ c cottage cheese
10¾ oz condensed cream of chicken soup, undiluted
8 oz wide egg noodles, cooked and drained
1 c grated monterey jack cheese
½ c chicken broth
½ c diced celery
½ c diced onion
½ c diced green bell pepper
½ c diced red bell pepper
½ c grated parmesan cheese
4 oz sliced mushrooms, drained
2 Tbl butter, melted
½ tsp dried thyme leaves

Combine all ingredients in slow cooker. Stir to coat evenly. Cover and cook
on Low 6 to 10 hours or on High 3 to 4 hours.
Makes 6 servings
 

Take a small pork roast and add it to the crock pot with a little water in the bottom. Add sliced onions if you want, they cook down to nothing but I like the added flavor. Cook on med. most of the day. In the late afternoon start pulling the pork apart with a couple of forks. Put meat in skillet and add as much of your favorite bottled bbq sauce to make them either really saucy or just moist. Heat until warmed through and serve on buns.
I also tried one of those new crockpot dinners in the freezer section of the store. It was the Beef Stew, and although not as good as my Mom's stew, it was ok.
 
Thanks, bananiem! I think I'll try this. I'm always looking for more things to do with pork since I don't much care for it unnless it's cooked in sauerkraut all day in the crock. ;) This sounds good!

I just thought of another thing I do. It wasn't in with my "recipes" because it's just a "dump it in" dish. LOL

Put a jar or 2 of spaghetti sauce in the crock with sweet Italian sausage...either the links (called Grillers) or just cut pieces from a "rope." Cook on LOW all day. When we use Grillers, we have sausage sandwiches with salad. The sausage tastes sooooo much better cooked in the sauce all day.

You can do meatballs (frozen ones work great if you don't want to make your own) for sandwiches or do either/both to serve over pasta.
 
Put Round Steak in crock pot with 2 cans of Cream of Mushroom soup, cook 7-8 hours on low-medium and either make noodles or rice to put the meat over just before you eat.

Can do exactly the same thing except with chicken breasts - if you want left overs use 4-8 chicken breasts. It's about 2 cans of Cream of Mushroom soup to 3-4 chicken breasts if you want some left over to put on rice or noodles or mashed potatoes.
 
I'll have to look through some of my crockpot recipes for you. Just thought I'd give you a tip. Buy a large package of ground beef at the grocery. On the weekend, brown the whole thing. Drain. Bag in baggies of about 1 lb. each. Put the small bags in a freezer bag and pop the whole thing in the freezer. Now when you need to put together a ground beef recipe, the meat is ready to go. I don't even worry about thawing it out before I add it to the crockpot.

You can also put a whole chicken in the crockpot overnight. In the morning, it's cooked. All you have to do is pick it off the bone and chop it up. Or even easier, do it with a package of boneless chicken breasts. Bag the same way you did the ground beef.
 
Put a roast or pork chops in the cooker. Sprinkle with a package of onion soup mix. Top with cream of mushroom soup. Add a tiny bit of water if you'd like, but not too much. The meat juices will mix with the soups and make gravy. Cook some noodles and a veggie and you have a meal.
 
Mix 1 can cream of mushroom soup with a little red wine, a package of Au Jus mix, and a package of ranch dressing mix. Coat a pot roast with it (I like chuck roast or one of the "flatter" cuts) and cook all day. It makes the most wonderful gravy! Serve over rice with side of veggies.

I have a bean pot recipe but it does require browning - maybe you could do it ahead of time:
8 slices of bacon, diced
1 pound ground beef
2 cans pork and beans
1 can kidney beans
1/4 cup brown sugar
1/2 cup ketchup

This makes a really rich bean stew. I sprinkle with shredded cheese and scoop out with tortilla chips!
 
I usually do only very simple things in the crockpot, none take much thought. I get a beef roast, cut up carrots and potatoes (frozen or canned carrots also work), defrost the roast (if it was frozen), put it in the crockpot with the potatoes (peeled and cut up of course) and carrots, add salt, pepper, onion salt, and garlic powder, put enough water to just cover it, and turn it on. Let it cook all day, mash the potatoes when you get home (if you want) and dinner is ready.

GMIL does a turkey breast in the crock pot, I think the same was as the beef roast, she uses celery with it (I don't like celery to eat, but the flavor is nice with the turkey).

We also get those young chickens (Tyson?) at the store, DH has to pull the insides out, I can't stand to do that, then just pour some lemon-pepper marinade or caribbean jerk sauce marinade over it and let it cook all day.
 
I just did one yesterday thanks to another poster -

5-6 breasts chicken
1/2 stick butter
1 large jar salsa
one can cut up pineapple - w/o juice

throw it all in together - it's yummy!

put on low setting

We had this one tonight. It was the first time I tried it and it was so easy!

Chicken Ramen Dinner
4 boneless skinless chicken breast halves
1 (10 3/4 ounce) can cream of chicken soup
1 package roasted chicken or vegetable flavored
Ramen noodles with seasoning packet
4 ounces sour cream

Place chicken in crockpot.

Mix together the soup with the seasoning packet included with the Ramen noodles, and spoon over the chicken. Break apart the noodles and sprinkle over the soup-seasoning mix. Cover and cook on LOW for 5 or 6 hours, or on HIGH for 3 to 4 hours.

During the last 15 minutes of cooking time, stir in the sour cream.

Serve while hot.
 
This one is easy.

4 boneless chicken breasts, defrosted
one half of a jar of salsa
a little water, just guess

Cook on low all day. DH loves this. I forgot the water one day and the sauce had thickened, but still tasted good, not burned.
