DH really wants to visit Universal when we go to Florida next month. It will be the 2 of us and our 10 month old daughter. I am wondering whether it's going to be any fun at all with a baby along.

We just got back from a weekend at US/IOA. We haven't done US/IOA in 10 years and never with kids. We had a great time though. We have a DD6 and a DD16mos and they both had fun. A 10 month old probably won't be able to do much, but the visual stimulation will keep her entertained. There is a kids play area that is kind of geared towards older kids and toddlers, but she might be able to do slides and stuff with you. Barney has a great little show that both of my kids enjoyed. We brought DD16mos on anything that she was allowed to (height-wise). She fell asleep on Shrek - I have no idea how...you will see what I mean. Jimmy Neutron - she had to sit in stationary seating, which was fine. She did Twister, Disaster, would have done Jaws, but it was closed. But the greatest thing about US/IOA is their child swap. It is so much better than Disney. You can stand in line all together until you are ready to board the ride. Then one of you goes on the ride while the other goes to the child swap waiting room. When the other person is done on the ride, you swap out and you can board the ride immediately. It is very easy and the rooms are inside and air-conditioned, which is great for the hot FL weather. As long as you don't mind riding the rides by yourself, the child swap is the way to go! Plus it gives baby time to get out of the stroller and explore if they need to.

As for IOA, the only thing DD16mos was able to do was Seuss land. The Cat in the Hat has a bit of spinning that she wasn't too sure about, but she loved everything else about Seuss. She also did the Teacup type ride in SuperHero land (we didn't spin the vehicle, though). When they are that young, it's more about the visual stim that keeps them intrigued and as long as you don't mind riding the rides by yourself, I don't see any reason why you wouldn't enjoy US/IOA with a baby. Hope this helps!
