We have been the last week of January for the past two years. When it inched just above 80, we found it really hit and were in shorts and a Tshirts. There is no way I could have done it in any type of long pant. (It also showed us brightly that we couldn't handle Disney in the summer.
Same trips, I was also in long pants, long sleeved shirt, lightweight fleece and windbreaker - during the day!
I'd say you have to pack shorts. I hate the look of shorts on me so I bring athletic type skorts. I also bring lightweight (also athletic type) capris for that truly in between weather.

When I went in December the forecast from a couple weeks out said 70s, but it ended up being in the 80s and I really needed my shorts.
I'm headed down about the same time you are. I plan on packing my workout capris, tshirts, and a few hoodies for the early mornings/evenings. Even when it's sweltering, my workout pants are my favorite thing to wear. They are moisture wicking so they dry quickly after water rides and help prevent my thighs from chafing. In cooler weather, they keep me fairly warm without feeling too heavy. You can find pretty inexpensive ones at
