Ultimate Park Hopper Question

We're trying something different for this trip, and I'm needing a bit of help. We booked AP rate at Swan through Dreams Unlimited. My husband is going to purchase an AP as he is in Orlando area frequently for business The rest of us (myself and 2 kids) were going to buy ultimate park hoppers. In the past we've always booked a package that included them - that's what's different this time.
I'm first wondering if the Ultimate Hoppers are the best plan - maybe we should go with reg. park hoppers and just buy admission to Quest seperately (will be at WDW Fri night to Tues eve), we don't usually do water parks. Is there any advantage I'm missing to Ultimates?
If we decide on Ultimates - where is the best place to purchase them? I was planning on ordering the AP from the disney site - but it doesn't appear that i can do that for Ultimates. Can they be purchased at the Disney store?

In all honesty I am not a big fan of the UPH. To me, if you don't use every feature on them, you are wasting money., and with PHs you never face expiration of media. With UPHs it expires at midnight of the day of departure. I would opt for hoppers and do DQ separately. www.ticketmania.com has good prices for DQ. You can buy all ticket media online at the Disney website.
