Hi! We arrive around 930pm, so I'm worried about getting in late and then doing parks in the morning. How much time would it save to get take an Uber or taxi?

It would depend on where your resort falls on the dropoff schedule. The time range for ME for my family has been 1 hr 20 minutes after landing to the Poly to 2 hrs 30 minutes after landing to Kidani. It would be likely be an hour or so to deplane, collect luggage, and drive over.
Magical Express has never taken us more than 90 minutes from the time we exit the plane to the time we enter the resort room. The transport to AKL Jambo House was one of the fastest.
With a 9:30 arrival time, I'd collect my own bags before heading down to ME anyway, unless you're going to have them held at bell services overnight or you're ok with receiving them at 1 AM or later.
If I'm collecting my own bags regardless, I'd take the Uber. I don't have personal experience with DME that late at night, so I'm not sure which one is faster if you're not collecting your own bags.

The time it takes will be luck of the draw. Based on if you have to wait for a bus to your resort, how long they wait to fill the bus enough to drive off, which resort gets dropped off first, etc.
If you're really pressed for time, a town car service could save you 30 minutes or so. Just remember that you'd need to pick up your check-out luggage first if you don't use DME.

I was going to guestimate it will save about 30 min too. Maybe more, maybe less. No way to know for sure now much till you take the trip since you have no way to know how long it will take to leave or how many stops you'd have to take.
I know with the change in Uber rules now we will be using it from now on. 30 min is 30 min. The cost will be reasonable enough now to make it worthwhile.
