Do Disney offer any nutritional information at QS/TS restaurants so that I can carb count and work out appropriate insulin doses?

No, carb counts are not available at restaurants. Most diabetics use an app or hard copy reference such as Calorie King to help.

I bring my own food this saves money and I know how many carbs are in the foods and when I do buy my food and bolus less since all the walking makes me go low
