Two Days in mid-February, any suggestions?

We're trying to decide on two Park days (not back-to-back) in the week of Valentine's Day. We'd have one-day tickets for EPCOT on the first of the two days, and then park hopper tickets for the second park day (HS, then over to EPCOT for a bit in the afternoon, then back to HS). Looking at all the different crowd calendars, things seem to vary a bit. Any suggestions on which days might be better options for those two types of tickets/parks? Thanks!
