Two Chefs de France questions

I want to try this restaurant on our trip in Sept but have a couple of questions.

1) can DH substitute something like mashed potato's for the sweet potato puree?
2) has anyone had the sweet potato puree? If so does it taste like a baked sweet potato because if so I can just switch sides with him because I love baked sweet potato's with my steaks.
3) please please please someone tell me what exactly a flan of leeks is? How does it taste?

While it always depends on the server and the chef, that night, the table service restaurants are almost always very accommodating of personal preferences like that.

Can't help you with the leeks but I saw there is mashed potatoes on other dishes so the substitution can easily be made. You can ask your server what the leek dish is if you don't get an answer here.

Yes, if it's already on the menu they will substitue sides.
