My wife and I don't really need a whole bird for Thanksgiving. I know you can buy just a breast, but we like dark meat as well. Years ago at a friends house They had a roll of turkey meat, white and dark, bound together with butcher's twine. I have never been able to find anything like that. Anybody know where to find such a thing?

Maybe try a professional butcher? It might have been a specially assembled roll.

BTW, I LOVE the dark meat, so I'm with you on finding it. :thumbsup2

Butterball has some type of dark meat/white meat turkey breast roll that I've seen at Walmarts. It looks about 3 lbs or so, good for a small family.

What about buying a small turkey and cutting it in half lengthwise. Cook one part and freeze the other.

I'll have to check it out. If I see it labeled as 'breast' I just assume it's all white.

My MIL buys the Butterball variety of these and serves it to us periodically. I would stay away from that brand. They are disgusting--very, very salty, oily and one encounters strange and unpleasant bits of gristle.

I think half a turkey or purchasing turkey parts would taste much better than the over-processed stuff.
