If you have a smoker, it's very easy to smoke meat. Unfortunately, if you *don't* have a smoker, don't bother to try. Some grills have a tray that holds wood chips, and you can also put a packet of wood chips wrapped in aluminum foil on your coals. Neither of those methods allow the meat to absorb the smoke because the meet will still cook at the fast speed of the grill. A smoker cooks the meat for a long period of time, allowing the meat to stay enveloped in the smoke for hours which gives it that wonderful flavor.
Smokers aren't expensive, though, and if you enjoy the turkey legs just think of the other possibilities that are out there! I'm so spoiled that I can't even eat regular turkey at Thanksgiving dinner anymore. If it ain't smoked, don't even put it on my plate!

"was trying to duplicate the Disney legs as well. I bought 8 legs at the market they weren't huge but adequate. I brined them over night in a gallon of water, cup of salt, cup of sugar, 1/2 cup of honey and crushed pickling spices(McCormick). Dried them off and smoked them with apple and cherry chunks. They came out great very much like ham. "
