Tuesday What's For Supper Thread

Tonight I'm making gemelli pasta with broccoli rabe, sweet italian sausage and chickpeas in it. It's a new recipe, so we'll see how it goes.

And I was going to ask you to post the recipe for this! I'm aking broccoli rabe with sausage over pasta tonight and would love to see your version. Thanks!

It was fantastic. Here it is:

Sticky Chinese Chicken

1 cup finely crushed garlic and onion croutons
1/4 cup cornstarch
2 T soy sauce
2 lbs. boneless, skinless chicken thighs (I used breasts instead), cut into 1 inch pieces
1/4 cup canola oil

1. In a large bowl, whisk together crumbs and cornstarch. Stir in soy sauce. (I did this in the food processor). Toss with chicken. Refrigerate at least 30 minutes.
2. Heat the oil in large nonstick skillet over medium heat. Add chicken and cook, covered, for 20-25 minutes until crispy and cooked through. Turn several times to avoid burning. Drain on paper towels.
3. Serve immediately with extra soy sauce and scallions, steamed rice, and sugar snap peas if desired.

This version is from Family Circle magazine. I'm looking forward to trying it, but I have a feeling my DS will turn his nose up at it. :rotfl:

2 T olive oil
3/4 lbs sweet italina sausage, skin removed
4 cloves garlic, sliced
1 can chickpeas, drained and rinsed
1 large bunch broccoli rabe trimmed and cut to 1 inch pieces
3/4 tsp dried oregano
3/4 tsp salt
1/4 tsp black pepper
1 lb gemelli or other small pasta
2/3 cup grated parmesan cheese

1. Boil water for pasta.
2. Heat oil in large skillet over medium heat. Crumble in sausage and cook, 5 minutes or until no longer pink. Add garlic during last minute.
3. Stir in chickpeas, broccoli rabe, salt, oregano, and pepper. Cover and cook 7 minutes or until broccoli rabe is tender. Add 1/4 C of the pasta water if the mixture becomes too dry.
4. While the sauce is cooking, prepare pasta following package directions. Drain, reserving 1 C of water.
5. Toss pasta with broccoli rabe mixture and 1/3 C of the cheese. Add some of the reserved water if desired to moisten mixture.
6. Serve immediately with remaining cheese on the side.
 

DH :love: is making grilled chicken thighs, and some sort of side dish. We will probably also torture Emily with some sliced carrots.

Brown sugar meatloaf and it is almost done,I can smell it. It is the only meatloaf I like:yay:
 
I have chicken defrosting, but not sure what to do with it! - Probably throw it on the grill and make some sliced potatoes in a pie plate. Salad or broccoli will finish it up.
 
Ham Steaks on the grill, mashed potatoes with gravy and carrots in honey sauce. :) My 10 year old was really sick last week and I promised to make his favorite dishes when he felt better! :)

Thanks for all the ideas, everyone. Hope you all enjoyed your suppers. We ended up having grilled steak, baked potatoes, and salad. Unoriginal, but delicious.

tonight was stove top stuffing, peas, and fried chicken.

except....i dumped most of the package of stuffing mix onto the (electric) stove top, causing the mix to burn and smoke, bumped into the fry pan, spattered hot oil on my arm, and dropped the pot of peas into the sink in a panic....

just then, the phone rang (some girl from rockaway bedding calling to schedule an appointment - yelled to her 'NOT NOW! MY STOVE IS ON FIRE!")

oh - and the smell set off the smoke detector.

thus causing my husband to jump out of the shower upon hearing me scream and the smoke detector beeping....

yep - a real "rube goldberg" moment if there ever was one...

so for dinner tonight? we had indigestion.

Wow, that is what I am making later in the week, and I've haven't tried it yet either! Come back after dinner and let me know how you liked it. :)
I am making one of my oldest recipes tonight, called Lazy Day Beef Casserole. (love the name) I got it from a church cookbook, their recipes are always good.
Well, it was only ok. I left out the mayo, used a little more meat, and used pre-cooked bacon. The mustard taste was too strong. DH didn't really like it at all. I liked it I guess, but not as fabulous as I had hoped.

One thing I did do as Paula did-make the loaf and cook it in a bigger pan over bread. It sucked up the grease nicely!
