Thanks for all your work. Good luck with the cake. I would love to make it for my son's BD on Sunday. I bet the chips are semi-sweet. Happy 4th.
 

i think i am going to try using unsweetened only because there is so much powdered sugar and also there is condensed milk (which i assume would be sweetened condensed milk). i have been checking out other fudge frostings in my cookbooks, and they all seem to call for unsweetened. so, i am going to try. hey, if it isn't right, it is still chocolate, and that can't be all that bad.

so far i have recalculated the recipe from weight measurements into cups and tablespoons (i just hope i got it right). :D

here is hoping it turns out ok, i know it will. the only thing i have to realize is that it won't be exactly like the one at disney's whispering canyon because it always tastes better when you are at the resort and i just know they must add some "pixie dust". :D
 
turn out? I am anxious to hear how your re-calculations turned out. Was your DH surprised?
 
hi, things didn't turn out as i thought. i figured there are about four batches in each recipe. anyway, i made a box devils food cake mix. then went on to make the other components. the kahlua simple syrup and the chocolate mousse came out wonderful. especially the mousse, my dh said it was just like the cake filling at whispering canyon and the best he has ever had. i wound up making the whole batch, i am glad i did and i will tell you why. then i tried to make the frosting, what a mess. it came out like it was burnt and hard chocolate and i didn't cook anything. i don't know what i did. i tried to figure it out but i can't. but i will keep trying.

anyway, all was not a complete flop. what i did was take the cake and brush on the kahlua syrup then i used the mousse to fill and frost the cake. i am glad i made the whole batch of the mousse. it was just perfect. i brought it to a 4th of july family picnic and everyone loved it.

i still would like to figure out the frosting, if anyone has any ideas or wants to give it a try, please help.

here is how i figured the recipe:

chocolate mousse:

1 quart heavy cream (4 cups)
8 oz. powdered sugar (1 and 3/4 cups)
4 oz. chocolate pudding powder (i used chocolate instant pudding 3.9 oz. box which is 1/2 cup)
4 oz. unsweetened cocoa powder (1/2 cup)

first sift the powdered sugar, instant chocolate pudding and cocoa powder, and put aside. in a mixer with whisk attachment start to whisk the heavy cream until slightly thickened, then add the dry ingredients and whisk until it becomes thick whipped cream. store in refrigerator. this was wonderful even eating by itself.

kahlua simple syrup

1 lb. sugar (2 cups)
1 lb. water (2 cups)
1 cup kahlua

Stir together sugar and water in small sauce pan and heat until sugar melts. take off heat and add kahlua. store in refrigerator.

fudge frosting

still working on it.

i think there are about four batches in each recipe. the mousse probably made about five quarts. and i used a quarter of it to fill the cake. thankfully i was able to use the rest to frost and decorate the cake and have a cup for my dh for dessert that night. also, i would probably make the mousse by itself and have just for dessert in chocolate cups, or even put in a pie shell.

all in all it all worked out. if anyone figures out the frosting please post.

Fudge Icing: (1 batch)

3 lbs chocolate chips
3 lbs condensed milk
1 1/2 lbs powdered sugar
1/4 lb butter
vanilla

After reading the recipe, here is how I would do the icing. I'd first melt the Chocolate chips over a double boiler. I'd then add the condensed milk (at room temperature) and whisk until smooth. I'd let this cool slightly. I'd then transfer it to a stand mixer. I'd start the mixer on low, and slowly add the powdered sugar. After all sugar is incorporated, I'd then up the mixer to at least medium and then add the butter softend and the vanilla. Since there is no measurement for vanilla, I guess it's to taste. I'd then beat it for a minimum of 2 minutes, until it is very fluffy and icing like.

Edited to add that I'd probably use semi-sweet chips, since bittersweet isn't usually used in icing.

that's about what i did. i took the melted chocolate and added it to the condensed milk. what i think happened is that i tried to halve the recipe and i either used too much or too little condensed milk. that made the chocolate seize. i also used unsweetened chocolate. the next time i will try the semi sweet. i think you are right in suggesting that. i will print out what you wrote so i can try your suggestion. :D

Just returned and we had dinner at WC one evening and the three of us shared a piece of the cake. It is very rich, but soooo good. Thanks for help on the receipe
