Trip Planning Help Needed!

Hello all,

So I have my trip booked! We arrive October 31st and are currently scheduled to leave November 7th. We haven't booked flights but we will be flying out in the morning the 31st so we will be landing between 4-6. I am also thinking of adding an extra day and leaving the 8th instead. This is the first time I am planning the trip entirely by myself. It will be just my dad and me.

We probably won't be doing universal this time around. He has never been so I would love to stick just to disney, but you never know if we add an extra day we could end up at universal or stay with just Disney.

My dad loves history and animals and stuff so I know he will love Animal Kingdom and Epcot the most probably. The problem is I have never spent more than a few hours in each.

I am still trying to plan the rides we will want to do. However the shows we want to do are as follows:
Illuminations
Wishes
Star Wars Fireworks
Fantasmic

I also want to do Animal Kingdom at night, but only after we do it in the morning first. However, I also want two days at Magic Kingdom (one night for a BOG reservation praying I get one)

I don't think we will make it out to a park the first night as we will probably want to sleep early and adjust to the time change (west coasters over here). However, I was thinking we could do HS at night to see the Star War Fireworks or Fan! and maybe hit a ride or two. I was thinking of making FP+ reservations for that day just in case we do make it out of the room cause better to be safe than sorry.

So far this is what I was thinking, but please help me by giving suggestions:

Day 1: Travel Day (Maybe go to HS at night to see a show)
Day 2: Epcot
Day 3: Magic Kingdom
Day 4: Animal Kingdom (in the morning)/ Unknown for evening
Day 5: Hollywood Studios (All Day)
Day 6: Epcot/Animal Kingdom (at Night)
Day 7: Unknown!
Day 8: Mini Golf, Travel Day (if we leave on the 7th, if not this day will be an extra park day)

Any help to suggest how to watch all the nighttime entertainment I want to see. Also any suggestions for ADRs would be helpful. It is looking like I should add the extra day to the trip.

If you're going to see both Star Wars Fireworks and Fantasmic!, you'll need two nights at HS to do it. They overlap slightly. Personally, I would do one of those on your first night. Fantasmic would probably be my first choice, because you do get to sit down, but the timing of the two might sway me as well, as I would want to do the one scheduled first in the evening and make an "earlier" night of it.

If you don't make it to HS that night, you do still have Day 7, but if this is how it plays out, I'd probably leave Day 4 evening unscheduled and make an early/easy night there for some rest.

Thank you for helping! I am very flexible in my plans and I know that I want to do a lot of night activities. Honestly, I only really want to do EPCOT for one night or day.
