We're leaving for DW on the 24th and i'm trying to decide how much money we should exchange to cash and/or travellers cheques. We prefer to use credit cards for most purchases just so we won't have to carry around too much cash, but i know that cabs and small treats at the parks we'll want cash on hand.

My question is how much cash should we have on hand to cover snacks at parks and cab rides? (just myself and DH going). Do the counter service restaurants in the parks accept credit cards? We'll be in disney for 5 full days (and 2 travel days on either end which i'm not counting)

Yup counter service accepts credit cards. Most places in Disney will accept a credit card. I think the only exception is the little carts that sell ice cream and water. You could carry more traveller's cheques though, once you use them to pay for items/services, you'll get cash as change.

Plus... I think most credit card companies have been adding a 2% -2.5% service charge to items charged in U.S. Dollars. (I've gotten a letter from MC and TD Visa to this effect-but not yet from RBC).
If this is the case, I'd rather just take travellers cheques (I don't get charged for them through our bank) and save the 2% for other stuff.

CIBC also charges 2.5%.This was a big reason why we decided to buy travellers cheques. That 2.5% will add up.We got our cheques at the CAA(no charge for them plus a little better exchange than what the bank was charging)We got mostly $50 ones(we had $1000 worth of them for food)and we had no problem using them any where in the World or outside the World either.

We do exactly as you do also-CAA is great for travellers cheques. Our bank does not charge us for AE travellers cheques. We save a little US $ each month in a US account and then just withdraw it in travellers cheques when we travel.
