definitely SBS over inline.
wrt safety tips and rides, i strongly strongly strongly recommend getting the unofficial guide to WDW 2006 and following the touring plans. while it sounds overwhelming at first, it really is the easiest way to do it. i was thrilled last year to be able to get to MK and do everything we wanted to do by about 1, then get the heck out of dodge when the crowds were unbearable.
also, at their website: touringplans.com they have a touring plan for young boys

which focuses on things that boys might like better.
our day went like this:
arrive v early. prior to opening. be one of the first in.
wait on mainstreet for 'rope drope'. have some toys or snacks to entertain the kids.
hustle to fantasyland, ride dumbo. ride dumbo again.
peter pan
winnie the pooh
small world
tea cups (which i'm not sure about with 2.5 yo)
indy speedcar
then with our kids (3/5 at the time) buzz, big thunder mtn
after that i can't remember but we pretty much followed the touring plan for small children in the UOGuide2005 (2006 is already out...definitely get that one) and it was great. you can follow it at your own pace, omitting anything that's not appealing.
In the UOGuide there is a ton of detailed info on every attraction in every park so that you know *exactly* what to expect. i found it to be right on. i knew which attraction each child would like and we split up when necessary. some ppl even recommend two single strollers, which is what i'll do this year. but your kids are the same age and at least at this age will probably enjoy the same things.
