I had an 7month trip planned with family over the 2021 Thanksgiving Holidays that had to be canceled due to me needing Open Heart Surgery. My banking window was Oct. so my only recourse was to book in Feb 22 (end of my use year). Original vacation was booked with banked 2020 pts. Should I have exercised my Travel Insurance or can I do so if something happens to effect the Feb. trip?

Since you are still scheduled to use your points in February, you haven't lost use of your points yet. If something happens to your February trip you can file a claim to recoup the annual dues associated with the points. Since they were banked from 2020 the trip insurance would need to have been purchased for the 2020 use year. If you had other lost expenses from your Thanksgiving trip (i.e., nonrefundable airfare) you could have claimed those, but you would have needed to report that within a short time frame of the cancellation.
