We are flying down the day prior to the cruise, staying with my brother and family in Orlando. A party of 11, ranging in ages 14-90..what is the best option? We are looking at cost and convenience (more so for my Great Aunt of 90)

I'd suggest arranging some sort of private shuttle/town car. I know some town car companies also have a trailer for luggage (for large groups).

After doing some extensive searching, we found that driving my brothers truck and van and parking off site 5min away from port is the most economic way to go

If you are going to drive, spend the extra few dollars and park at the port. You can get to your car and leave, rather than transfer everything a couple times. The porters at PC are great and will do all the heavy lifting for you. DH and I only have a couple bags, but it is worth the tip to have them do all the work.
