Just curious, but how do they get the children out at 8pm? I also wonder how it's done at other places that magically turn 21 at a certain hour.
What I've seen other places is they let those tables with under 21 guests know that they will need to exit the area at 8PM. They will reminded them if they order another round or food about the policy. The policy at Disneyland is a big different but had an under 21 guy come in around 11 and told he had to quickly depart, bartender made his mocktail and he had to leave. I don't think the bartender ever took his eyes off him.
 
We were staying at the Poly, waiting on our room to be ready and after lunch at Captain Cooks, happened to be walking past when a Cast member walked out with an IPad taking reservations. My husband and I got in line with our young grandson and put our name on the list. Got a text ten minutes later and sat at a table with another young couple with young kids. We each had a drink then left shortly after. Getting there right after three was easy, we never tried again but enjoyed to go drinks from the outside bar each night on our way back to the room.
 
It's busy, victim of its own success. When we went we gave them our cell # and walked around the Poly for half hour. That was a Sunday night during a rain storm. We got within about 30 minutes, stayed for a couple hours. I think they would be wise to open up earlier, but alas I'm not in charge.

Just came back from Disneyland, parks were pretty slow and thus I was able to walk right into Trader Sam's ETB 3 times with no wait. Plus they have all the mugs in stock ;)

Disneyland's opens at 11:30, I don't know why they don't do that at WDW. The demand certainly seems to be there.
 

We have only been there right at opening and always found a long line behind us.
Is is more or less busy later in the evening? We are thinking of stopping there one evning after HEA at MK. Just wondered if its worth the trip or if we'd get there and find a long wait.

We tried one evening at about 9.30 pm and there was a two hour wait. We found that it was best to queue at about 2 pm and that they usually opened their list at around 2.30/2.45.
